Learn to make my favourite biscuity truffles! 

you'll need:
20 digestive biscuits
200g of condensed milk (yes I accidentally poured more)
125g butter
2tbsp cocoa powder
125g desiccated coconut 
Chocolate Sprinkles 

Method:
Bash up your digestives in a plastic bag until they are more like crumbs (ALWAYS double bag to avoid any spillages)

on a low heat, heat up the condensed milk and butter until the butter has fully melted. Allow to cool slightly.

Add the condensed milk and butter mix to a bowl then add the digestives and give a good stir before adding the cocoa powder and the coconut. Stir well, then when the mixture gets too sticky you'll have to get your hands dirty (wash them first, obviously). Roll them into ping pong size balls and then roll them in the chocolate strands until fully covered. 

chill them in the fridge for at least 30 minutes before eating.

eggy curry 😋 Ingredients: 3 potatoes, peel and eggy curry 😋

Ingredients:
3 potatoes, peel and cut into squares
1 pepper diced
4 spring onions chopped
3 tomatoes diced
4 cloves of garlic
5 eggs, beaten
1tbsp Garam Masala
1tsp Turmeric 
1tsp paprika
1tsp cayenne pepper
olive oil 

Method:
Fry the potatoes for a couple of minutes on a high heat then cover with a lid. Fry until they are browned on one side. Take the lid off and add all vegetables and garlic, stir and fry for 3-5 minutes before adding the spices. Fry for an additional 4 minutes at a high heat then add in half a cup of water and put the lid on and cook for around 15 minutes or until the potatoes are softened. Take the lid off and add the beaten eggs and stir until they are cooked, then serve with rice and naan bread.

Week 17 of 2025 A week of injections and a grumpy Week 17 of 2025 A week of injections and a grumpy baby (despite what the pictures show)

#CapCut On the 15th of March (yes, very late in p #CapCut  On the 15th of March (yes, very late in posting this!) we went to Origano on Leith Walk. @origanoleith

This has been a favourite of ours since we first visited on our first "eating out" date. It's got the perfect date night vibe with candles on all the tables and low lighting. 

Absolutely no pizza compares to the ones we get at Origano, to the point that it has ruined other pizza places for me! 

To start off we had some garlic bread. It was sensational and I highly recommend you try it when you're in. It had the perfect mix between crispy crusts and soft middle. 

My pizza was the Margherita Speciale (tomato sauce, baby mozzarella, garlic, basil, fresh oregano, Santos tomatoes)  with added chilli and red onions. I always pick my own toppings because I am quite fussy, and ALWAYS know the exact flavour combo I want. I always find the amount of tomato sauce and mozzarella they put on to be perfectly to my liking, and this was no exception. 

My partner had the Polpette Piccanti which has tomato, mozzarella, meatballs, nduja, garlic, green chilli, Santos tomatoes, rocket and shaved grana padano. It looked delicious and he assures me that it was. 

We had these alongside garlic oil and chilli oil to add a little extra to the meal. (I mostly use the oil for my crusts, not going to lie.)

For dessert we had a chocolate fudge cake (served warm) with ice cream. I really liked that it came with a little raspberry on top. I find that chocolate fudge cake can sometimes be surprisingly dry in restaurants, but this one had the perfect amount of moisture to it. 

All in all we had a fantastic meal out and will definitely be returning (maybe for our next anniversary 😁)

This is a cheap and very easy recipe. Perfect for a weekday meal. my portions served 2 (although we were both VERY full after). 

Ingredients:
1 block of halloumi 
1 onion, diced 
6 cloves of garlic
2 peppers, sliced
olive oil 
8 flour tortillas 
Salt
Pepper
2 tsp oregano
2 tsp smoked paprika
1 tsp chili powder
1 tsp ground coriander (I used fresh)
1 tsp of cumin
1 tsp garlic granules

Method:
Fry up your onion, garlic and peppers for 5 minutes before adding the Halloumi. Fry until the peppers have softened then add your spice mix. Heat up your tortillas based on the instructions on the packet. 

Serve with Guacamole and Salsa (I was going to do salad too but forgot to pick it up!).

#CapCut This cheap and easy to make three bean ste #CapCut This cheap and easy to make three bean stew serves 4-6 and has a perfect mix of protein and vegetables. 

Ingredients:
2 Peppers sliced
1 onion diced
2 chilli diced
3 garlic cloves chopped
4 tablespoons tomato puree
400g can chopped tomatoes 
400g cans of butter beans, cannelini beans and black beans, drained
olive oil
salt and pepper
A bunch of coriander
1tsp oregano
1tsp basil
1tsp paprika
1/2tsp cayenne pepper

Method:
Fry up your onions, garlic, chilli and peppers until the peppers are softened. Add your spices, coriander, tomato puree and chopped tomatoes along with 300ml of water. Stir well and season with salt and pepper before adding in all of the beans. Cook for around 30 minutes, or until the sauce has reduced to your preferred consistency.

Make this delicious Indian side dish with me! 

Ingredients:
2 potatoes, boiled and diced into small cubes
1 cup of peas
2 frozen Paratha
A bunch of coriander
1tsp Cumin
1tsp Paprika
1tsp Turmeric 
1tsp Garam Masala 
4 cloves of garlic (I use frozen)
A small big of ginger (I also used frozen for this)
Olive Oil
Salt and Pepper

Method:
boil your potatoes and allow to cool. Peel and dice them into small cubes. Ensure it's well cooked throughout! 

Add your olive oil, garlic and ginger into a pan and fry until the garlic is mushy. Add your peas, coriander and spices in and stir well before adding in the potato. Fry for an additional 10 minutes. 

Get your paratha out and cover it with flour before it defrosts. allow to defrost slightly before adding the mix in and closing (as displayed in video). you can also cut them in half and fold them into the triangle shape. 

Pop them in the air fryer at 180°C (they can also go in the oven, or be deep fried!) for around 15 minutes (or until they've browned).
