A bittersweet father's day this year. Grumpy (my A bittersweet father's day this year. 

Grumpy (my grandfather), as we so affectionately called him, passed away on Monday. Very happy I took Rosie up to meet him even if it meant missing out on events like weddings and quizzes. As I was raised by a single mother he was my father figure throughout my life. There is so much he has taught me over the years.

He taught me how to steal (put it in grannies bag), how to fight (wave your arms in the air and walk backwards), but the best thing he gave me was his sense of humour. No matter where we were or the situation he would always find some way to make us giggle. My love of comedy largely comes from him. 

It's also Clint's first father's day. I'm so happy and forever thankful that even though Rosie doesn't get Grumpy to make her giggle, she gets her father who can also always make me laugh no matter how bad I feel. Something he will also do for Rosie. He is the best father to Rosie (just ignore what she says when her milk isn't given fast enough) and we're both very lucky to have him.

Learn to make my favourite biscuity truffles! 

you'll need:
20 digestive biscuits
200g of condensed milk (yes I accidentally poured more)
125g butter
2tbsp cocoa powder
125g desiccated coconut 
Chocolate Sprinkles 

Method:
Bash up your digestives in a plastic bag until they are more like crumbs (ALWAYS double bag to avoid any spillages)

on a low heat, heat up the condensed milk and butter until the butter has fully melted. Allow to cool slightly.

Add the condensed milk and butter mix to a bowl then add the digestives and give a good stir before adding the cocoa powder and the coconut. Stir well, then when the mixture gets too sticky you'll have to get your hands dirty (wash them first, obviously). Roll them into ping pong size balls and then roll them in the chocolate strands until fully covered. 

chill them in the fridge for at least 30 minutes before eating.

eggy curry 😋 Ingredients: 3 potatoes, peel and eggy curry 😋

Ingredients:
3 potatoes, peel and cut into squares
1 pepper diced
4 spring onions chopped
3 tomatoes diced
4 cloves of garlic
5 eggs, beaten
1tbsp Garam Masala
1tsp Turmeric 
1tsp paprika
1tsp cayenne pepper
olive oil 

Method:
Fry the potatoes for a couple of minutes on a high heat then cover with a lid. Fry until they are browned on one side. Take the lid off and add all vegetables and garlic, stir and fry for 3-5 minutes before adding the spices. Fry for an additional 4 minutes at a high heat then add in half a cup of water and put the lid on and cook for around 15 minutes or until the potatoes are softened. Take the lid off and add the beaten eggs and stir until they are cooked, then serve with rice and naan bread.
