This recipe is designed to serve 2 people Ingredients: 2 red peppers 1 onion 1 red chilli 3 garlic cloves (I normally double this because I love garlic) 4 eggs 1x 400g tin of tomatoes 1tbsp Cumin 1tsp ginger 1tsp paprika 1/2tsp of Cayenne Pepper (add more if you like a lot of spice) salt pepper olive oil Method: Slice the peppers into strips and start to fry them in olive oil for around 5 minutes, add the onion, chilli and garlic and fry until the peppers are softened. Add the spices and stir frying for another couple of minutes before adding the tin of tomatoes. Once you've added the tin of tomatoes, heat until some of the water has disappeared, then add the eggs. To add the eggs you should be able to make a space for them in the sauce that doesn't fill with tomatoes juice (as shown in the video), if it immediately fills with tomato juice give it a little longer to heat up. it normally takes about 10 minutes for the eggs to cook to the way we like them (slightly runny), but if you prefer them to be harder or runnier then you can adjust the timings to suit. Ingredients:

Cooking Steps:

Heat olive oil in a skillet over medium heat. Cook onion, peppers, and garlic in oil until the peppers have softened slightly, stirring frequently.

Add the spices, salt and peppers and fry for a couple more minutes. Tip in the tinned tomatoes and keep the heat on until some of the water has disappeared, then add the eggs.

To add the eggs you should be able to make a space for them in the sauce that doesn't fill with tomatoes juice (as shown in the video), if it immediately fills with tomato juice give it a little longer to heat up. The eggs normally take around 10 minutes.
